I Need A Recipe.

I accidentally told my girlfriend I'd cook dinner tomorrow night but I really only know how to make different variations of pasta which she doesn't want. She is one of those vegetarians who eat fish so I was thinking of making something with fish or shellfish. Tell me what to make and how to make it.

If you only know how to do pasta dishes then keep it simple. This is a pretty nice recipe. Simple, inoffensive and wholesome-

Do some fish en papillote (or foil). You basically wrap a piece of fish in some foil with aromatics and put it in the oven.  Serve w/ rice. 
last time i got the sausage at citi i took a bite and juice went all over my shorts.

baguette. sea salt butter

 tossed salad of baby greens w/ mustard vinaigrette

oaky buttery cardonnay
or nice bottle of chimay cinq cent

dessert:


stilton w/ candied pecans and a 10 year tawny

or a pear tart and an espresso.

then bone by the fire.

Takes about 20 minute total including prep.  use that bread to soak up the broth, hella good.

1/3 cup olive oil
1/2 onion, thinly sliced
1/3 cup heavy cream
4 large garlic cloves, chopped
2 teaspoons fennel seeds
1 teaspoon dried crushed red pepper
1/2 teaspoon salt
1 cup dry white wine
2 1/4-inch-thick lemon slices
1/2 cup chopped fresh parsley
2 1/2 pounds fresh mussels, scrubbed, debearded
1/2 cup chopped seeded tomatoes

preparation

Heat oil in heavy large pot over medium-high heat. Add onion, garlic, fennel seeds, crushed red pepper and salt; sauté until onion is light brown, about 4 minutes.

Add wine, lemon slices and 1/4 cup parsley; bring to boil. Add mussels.

 Cover pot and cook until mussel shells open, stirring once to rearrange mussels, about 6 minutes; discard any mussels that do not open.

Using slotted spoon, transfer mussels to large shallow bowl. Boil broth in pot until reduced to 1 cup, about 3 minutes; add cream, season to taste with pepper. Pour broth over mussels. Sprinkle tomatoes and remaining parsley over.

id go with this, sounds good.
also, serve with french fries to dip in that beast broth

broth with a brothy meal?  seems conflicting and the flavor profiles aren't too simpatico. plus cold soup in the winter is kinda wrizong.

it was 85 here yesterday. also, the gazpacho i make isn't very brothy at all. i get ya though

Ingredients

    1/2 cup minced ginger
    1/4 cup sesame seeds
    1 tablespoon cracked black pepper
    1/2 pound very fresh, sushi-grade ahi tuna
    Kosher salt
    3 tablespoons peanut oil, for searing
    1 tablespoon lime juice
    1 medium-size, ripe avocado, peeled, pitted, quartered and sliced
    2 cups mixed greens
    12 thin slices red onion
    1 medium tomato, peeled, seeded, and diced
    Ginger Sauce, recipe follows

Directions

On a shallow plate, mix together the ginger, sesame seeds, and cracked black pepper. Season the tuna with salt.

Make 1/2-inch deep slices in the tuna, every 1/4 to 1/2-inch or so to make it easier to slice at the end. Roll the tuna in the ginger mixture, pressing lightly so the mixture sticks to the tuna.

Place a saute pan over high heat. Add the oil and sear the tuna on all sides, about 30 seconds per side. Remove the tuna from the pan and set aside. Deglaze the pan with lime juice. Pour the lime juice over the tuna.

In a bowl combine the avocado, greens, red onion, and tomato. Toss with some of the Ginger Sauce. Slice the tuna, following the incisions made earlier. Place some of the dressed greens on 4 plates. Top with sliced tuna and drizzle with some more of the ginger sauce.
Ginger Sauce:

    1 small shallot, minced
    1/2 teaspoon finely grated fresh ginger
    Freshly ground black pepper
    1/3 cup soy sauce
    1/3 cup lime juice
    1/3 cup olive oil

In a small bowl, combine the shallot, ginger, a few grinds pepper, soy sauce, and lime juice. Slowly whisk in the olive oil and set aside. When ready to serve, whisk thoroughly to combine.


do that with a ginger salad/slaw, some edamame, and an orange tea
